The good news is, these days fresh herbs like basil, chives, dill, chervil, and tarragon are usually available in most grocery stores. The not-so-good-news is, small bags of these herbs are rather expensive and they won’t keep very long in your refrigerator. But don’t worry. Here’s a great way to preserve fresh herbs so your money is well spent.

Partly fill the sections of an ice cube tray with pieces of fresh herbs, then fill each section to the top with water. Place the trays in the freezer until the water freezes.

Once the water has frozen, pop the cubes out of the tray and place the herb cubes in plastic freezer bags. Store them in the freezer for up to 3 months.

To use the herb ice cubes, simply add the number needed to soups, stews, and other dishes. The heat will melt the cube(s) and the herb will add fresh flavor to the dish.
