Serve Snack Cake!

Snack cakes are usually fairly simple and inexpensive to make. They’re tasty but pretty plain – certainly not something you’d want to serve at your next dinner party.

That’s not the case with the following recipe. This Applesauce Snack Cake (from Martha Stewart) is impressive enough (and expensive enough) to please even your most important dinner guests. Your family will love it too.

APPLESAUCE SNACK CAKE

1 cup (2 sticks) plus 3 tablespoons unsalted butter, plus soft butter to coat pan
2 1/4 cups superfine sugar
2 1/2 cups applesauce
2 3/4 cups plus 3 tablespoons all-purpose flour
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
Pinch ground cloves
Pinch salt
1 3/4 teaspoons baking powder
1 cup chopped pecans
1 teaspoon pure vanilla extract
2 tablespoons Calvados (a French apple Brandy)
1 large apple, peeled and very thinly sliced (1 cup)
1/4 cup light-brown sugar
1/4 teaspoon ground ginger

1. Heat oven to 325°. Brush a 10-inch spring-form pan with soft butter. Coat the entire pan with 1/4 cup superfine sugar, lightly tap out excess sugar, and set pan aside.

2. Combine 1 cup butter and remaining 2 cups superfine sugar in bowl of an electric mixer fitted with a paddle attachment. Beat on medium speed, scraping down the sides with a rubber spatula, until mixture is light and fluffy, about 5 minutes. Carefully fold in the applesauce. Do not overmix.

3. Sift together 2 3/4 cups flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, cloves, salt, and baking powder. Fold the dry ingredients and pecans into the applesauce mixture. Add the vanilla, Calvados, and apple slices; mix until just combined.

4. Transfer the batter to the prepared spring-form pan. Combine the remaining 3 tablespoons butter, 3 tablespoons flour, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, brown sugar, and ginger in a small mixing bowl. Mix with fingers until just combined and crumbly, and sprinkle lightly over the batter.

5. Place cake in oven, and bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour and 50 minutes. Let stand until completely cool.

Poached Pears

Poached pears make such a festive dessert for the holidays. The pears take on the flavor and color of the poaching liquid. Red fruit juice (cranberry, raspberry, or pomegranate juice are all good choices) or red wine (I like merlot) will produce velvety crimsom colored pears that are sweet and flavorful.

Here’s a recipe for Poached Pears in Red Wine that’s so easy, even novice cooks will want to try it.

These Poached Pears with raspberry yogurt mint sauce will make an impressive end to any holiday meal.

Rolling Out Sugar Cookie Dough

Three Angels Gourmet Co. makes such attractive and delicious sugar cookies when the dough is rolled out and cut into a variety of shapes with cookie cutters.

Here’s an easy way to roll out the sugar cookie dough. It will help the cookies retain their shape and you won’t have to use excess flour to keep the rolling pin from sticking to the dough.

Instead of plopping the cookie dough directly onto your cutting board (as pictured above), lay out the dough on a piece of parchment paper. Cover the dough with another piece of parchment paper of equal size.

Use a rolling pin to roll over the top sheet of parchment paper until the dough underneath thins out to the thickness you want for your cookies (you can lift the paper as you’re rolling, to smooth out any wrinkles). Peel off the top sheet of parchment and cut out the cookies with cookie cutters. Transfer the cut cookies to a baking sheet and pop them into the oven and bake.

The Perfect Cheesecake

Cheesecake has become one of the most popular desserts in the United States. Nothing is quite as rich and delicious, and as impressive to serve, as a firm creamy cheesecake with a glorious topping of fruit, sour cream, or chocolate.

But don’t be intimidated by this fancy dessert. You don’t have to BUY the perfect cheesecake from a pastry shop or bakery. Bake the perfect cheesecake yourself at home. You just need a good, easy-to-follow recipe, and a few tips for success before you get started.

First, learn some Cheesecake tips and read these additional hints for baking the perfect cheesecake.

Next, pick out the perfect recipe (see below).

Now, gather your ingredients and get started. You should be well on your way to baking the perfect cheesecake!

Here’s my favorite recipe. Be sure to follow the tips and hints (in the above link) when making this dish.

CHEESECAKE

Make a graham cracker crust according to the recipe on the graham cracker crumb box. Press the crust into the bottom of a 9 inch spring form pan and go up at least 1/2 inch on the sides.

Combine the following in a large mixing bowl:

2 (8 oz.) cream cheese (softened)

1 1/2 c. sugar

3 eggs

1 tsp. vanilla

Beat until smooth. Pour into the crust and bake for 30 minutes at 375 degrees.

Cool and refrigerate. When cake has completely cooled, and just before serving, remove from spring form pan and place on a footed cake plate or other large plate. Spoon a can of prepared cherry (or strawberry) pie filling evenly over the top of the cake. Refrigerate any leftovers.

Make Your Own Strawberry Sorbet

I suppose we all have our favorite seasonal recipes. This simple Strawberry Sorbet is one of my absolute favorites for summer. A cool and delicious strawberry sorbet can be an impressive end to a meal on a hot summer’s eve. And the only special equipment required is a food processor or blender. But you don’t have to tell your dinner guests how simple the sorbet was to prepare. That can be your little secret.

Note: While sorbets are generally made without milk products, eggs, or gelatin, this recipe does call for sweetened condensed milk. This is all you’ll need:

1 quart sliced strawberries
1 (14 oz.) can sweetened condensed milk
2 tsp. lemon juice

Puree all the ingredients together in a food processor or blender. Pour the pureed mixture into a shallow metal pan and freeze until ice crystals form. Use a fork to break up the crystals about every 30 minutes or so and continue to let it freeze until it is solid enough to be scooped into balls. Makes about 6 servings.
