Crockpot Russian Chicken

By admin at 8:48 am on July 4, 2007 | No comments

71106_chicken_wingsHere’s a recipe for easy Crockpot Russian Chicken. It isn’t a new recipe, but it’s one of my old favorites, especially during the summer since the crockpot doesn’t heat up the kitchen the way the oven does.

Put this dish in your crockpot in the morning, and by evening you’ll have dinner ready with just the addition of some brown rice and a tossed salad. M-m-m…yum!

CROCKPOT RUSSIAN CHICKEN

1 (16 oz.) bottle Russian dressing

1 env. onion soup mix

1 (10 oz.) jar apricot preserves

4 to 6 large pieces of chicken (I prefer to use a large package of chicken wings or thighs)

Salt and pepper to taste

Combine the Russian dressing, onion soup mix, and apricot preserves in a bowl and pour mixture into the crockpot. Season the chicken with salt and pepper. Place chicken, skin side down, in the crockpot. Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours).

Serves 4-6.
